RBOWBOW PITAS

'Eating with your hands is of course a lot of fun, which is mandatory with this colorful dish. Just mess around!'

One takes:

(for 6 rolls):

1 ½ red pepper

150 g grated carrot

100 g corn kernels from a jar

6 (spelt) pita breads

150 g pre-cooked beetroot

300 g soft goat cheese

 

And this is how you do it:

–Remove the stem and seeds from the peppers and cut the peppers into very thin strips.

–Mix this together with the grated carrot and corn in a bowl.

–Add a dash of olive oil and a pinch of salt and pepper and stir well.

–Heat the pita breads according to the instructions on the package.

–In the meantime, mix the beets together with the goat cheese, a dash of oil and plenty of salt and pepper with a hand blender into a thick sauce.

–Cut open the warm rolls, fill with the vegetable mixture and finish with a generous dollop of sauce.
