Eand a delicious recipe for Friday evenings with your babysitting children!
One takes:
(for 4 “rolls”):
550 g sweet potatoes
4 eggs
4 leaves of lettuce
1 avocado
4 tbsp Greek yogurt
4 burgers
And this is how you do it:
–Peel the sweet potatoes, finely grate them with a hand grater or food processor and spoon into a bowl.
–Add a pinch of salt and pepper followed by 2 eggs and stir well.
–Heat a good dash of oil in a frying pan and place four sweet potato mounds in the pan, flatten them with a spoon so that they become the size of a hamburger. Bake the rounds on both sides for about 10 minutes. You'll need eight rounds in total, so you can make the other four in a second skillet.
– In the meantime, wash the lettuce and peel and cut the avocado into wedges.
– Season the Greek yogurt with some salt and pepper.
–Fry the hamburgers in a little oil in a frying pan alternately for about 8 minutes.
–Remove them from the pan and place on a plate covered with aluminum foil to keep them warm.
–Knock the remaining 2 eggs and fry a fried egg in the frying pan with a little oil.
–Now build the “sandwiches”: 'start with a rösti round, place a lettuce leaf on top, followed by the hamburger, the avocado wedges and a tablespoon of yoghurt, a quarter of a fried egg and finish with a rösti round. Repeat for the remaining three burgers.'
