WRAPS WITH FISH STICKS
'Many children are not really fish eaters. But fish sticks, on the other hand, are okay. Because they are not as definable as fish. Oh well, who cares? Hoppa, another portion of fish in. And tomorrow the focus will be on vegetables again.'
Ingredients:
(for 6 servings):
8 tbsp Greek yogurt
6 thawed square cod fillets from the freezer. Fresh fillets are also possible! Then your sticks will simply be less neatly rectangular.
2 eggs
200 g oatmeal
6 wraps
3 handfuls of butter lettuce
How to make:
–Mix the Greek yogurt with a dash of oil (preferably extra virgin olive oil) and a good pinch of salt and pepper. Set aside for a moment.
–Allow the fish blocks to thaw and cut each into 2 strips, so that you have twelve sticks.
–Beat the eggs in a deep plate.
–Put the oatmeal into the food processor together with a good pinch of salt and pepper and grind finely into flour. Place in another deep plate.
–Then dip the sticks through the egg, through the oatmeal, through the egg again and through the oatmeal again. Make sure they are all well covered on all sides with an oatmeal layer.
–Heat a good dash of oil in a frying pan with a good non-stick coating and fry the sticks on both sides for about 4 minutes until they are golden brown. This will probably have to be done in two stages, or you will need a very large pan.
– Spread each wrap with a little Greek yogurt and top with some butter lettuce.
–Finish the wraps with two fish sticks per wrap and fold in half.
