Healthy oatmeal cookies

These delicious chocolate oatmeal and banana cookies are healthy cookies and contain only 3 ingredients and are quick and easy to make.

Ingredients for 16 pieces:

  • 100 grams of oatmeal
  • 2 large ripe bananas
  • 50 grams of dark chocolate 

Preparation: 

Preheat the oven to 180 degrees. Chop the chocolate into small pieces. Mash the bananas in a bowl with a fork. Then stir in the oatmeal and chocolate.

Make 16 balls from the mixture and flatten them on the baking tray. Place the baking tray in the oven for 20 minutes.

Tip: store the healthy cookies in a closed container. To make them nice and fresh again, you can also warm them up in the oven for a few minutes.

Sugar-free yogurt coconut-pineapple cake 

Ingredients: 

Preparation: 

Preheat the oven to 170 degrees. Place the wheat flour, oat flour, coconut grater and baking powder in a bowl and mix. Then add the yoghurt, honey, eggs and water and mix until a smooth batter. Pour this into the cake tin. Bake the cake in the preheated oven for about 40 minutes. Then let the cake cool thoroughly. While the cake is cooling, make the frosting: puree the pineapple into the yogurt with the honey. Spread this on the cake when it has cooled. Then cut the yogurt cake into 12 pieces.

You can keep the cake in the refrigerator for 3 days and in the freezer for much longer. This means there is always a responsible snack ready for you.

Delicious lemon muffins with poppy seeds

Ingredients: 

  • 1 tbsp coconut oil + extra for greasing
  • 2 (organic) lemons
  • 1 vanilla pod the marrow
  • 330 g spelled flour
  • 2 tsp baking powder
  • 3 eggs
  • 255 g Greek yogurt
  • 8 tbsp honey
  • 150 ml milk of your choice
  • 3 tbsp poppy seeds

Preparation:

  • Preheat the oven to 170 degrees and melt the coconut oil in a pan.
  • Grate the zest of the lemons and then squeeze them (if you don't have organic lemons, wash them well first).
  • Place the lemon juice and lemon zest together with the other ingredients except the poppy seeds in a mixing bowl and mix until a smooth batter.
  • Then fold in the poppy seeds.
  • Divide the batter between the cavities of a silicone muffin tin (or use paper cups) and place in the oven. Bake the muffins for about 40 minutes.
  • Let them cool briefly before removing them from the muffin tin.

Healthy Snickers

Homemade Snickers made from dates, peanut butter, peanuts and dark chocolate. Enjoy responsibly!

Ingredients: 

  • 60 g oat flour
  • 150 grams of dates
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla
  • 2 tablespoons milk (vegetable)
  • 50 g peanuts
  • 100 grams of dark chocolate
  • 2 tablespoons of water
  • pinch of salt

Preparation:

  • First make the caramel layer. Soak the dates in warm water for 10 minutes. Let these drain and put them in a food processor together with the peanut butter, vanilla, 2 tablespoons of milk and a pinch of salt. Mix this into a sticky mixture.
  • Place 3/4th of the mixture in a separate bowl and set aside, leaving 1/4th of the mixture in the food processor. Add the oat flour and 2 tbsp water to the food processor and mix until combined. Line a baking tin with baking paper and spread the oat flour mixture over it. Then spread the caramel layer over it and sprinkle the peanuts over the caramel layer. Press them a little so they stay in place. Place it in the refrigerator for at least 2 hours.
  • Cut the Snickers into strips. Melt the dark chocolate in a bain-marie over a pan. When the chocolate has melted, place the bars in the dark chocolate and gently turn it with two forks so that the chocolate is evenly distributed over the bar. Place the bar on a piece of baking paper and let it harden.
  • Tip: these responsible Snickers are also vegan (provided the chocolate is vegan) and gluten-free (provided the oat flour is pure and gluten-free).

Blueberry oatmeal cake

Ingredients: 

  • 150 grams of oatmeal
  • 400 ml skimmed (or plant-based) milk
  • 50 g whey vanilla flavor (you can replace this with 50 g oatmeal. Then add some sweetener or honey!)
  • Box of frozen blueberries
  • Springform pan with baking paper
  • Blueberries for the topping

Preparation:

Preheat the oven to 175 degrees. Place all ingredients in a bowl and mix well. Pour the batter into the springform pan and bake the oatmeal cake for 40 minutes. Let it cool thoroughly before cutting. If necessary, decorate the cake with the blueberries you have left.

You can freeze the cake and easily take a slice out of the freezer in the morning!

Cottage cheese balls with raisins 

You make the cottage cheese balls with banana, so that they become nice and sweet. Did you know that bananas are often an excellent substitute for eggs in pastries? 

Ingredients: 

  • 125 g low-fat cottage cheese
  • 1 banana
  • 125 g whole wheat flour
  • 6 g baking powder
  • 50 g raisins

Preparation:

Preheat the oven to 180 degrees. Place the cottage cheese and banana in a bowl and puree with a hand blender until a smooth mixture. Then add the wheat flour, baking powder, raisins, a pinch of salt and 2 tablespoons of oil to the mixture and stir well. Make 8 small balls from the dough and place them on an oven tray lined with baking paper. Flatten the dough balls slightly. Slide the oven tray into the oven and bake the cottage cheese balls for 15 to 20 minutes until golden brown. Freezing? Let it cool completely first.
